Last night’s dinner was meatloaf balls and it was inspired by a post I saw on Pinterest. The pinner said the individual balls made the dish super moist and savory. I haven’t come across a recipe using oatmeal before so it peaked my interest. Normally I don’t like dry meatloaf so, I’ll usually make it with saltine crackers or breadcrumbs. At least once a week I like to try new recipes, especially if it doesn’t require a lot of preparation time. Unfortunately, the link to this pic did not work so I had to improvise.
Ingredients:
1 1b ground beef
3/4 cup uncooked oatmeal
2 tsp. chopped parsley
1/2 cup milk
1 egg
2 tbs. chopped onion
1/4 tsp. garlic powder
salt and pepper to taste
Directions:
Preheat oven to 375°F.
- Mix all ingredients in medium bowl.
- Use a large spoon or ice cream scooper to place each ball in a cupcake pan.
- Brush the glaze all over the top of each meatloaf ball.
For the glaze: mix 2 tsp each of sweet and spicy chili sauce and bbq sauce
Bake, uncovered, 25-40 minutes. Drain then spoon the remaining sauce mixture over meat loaf balls
Bake for an additional 5 mins. Top with cheese, optional.
This new recipe turned out delicious -next time we will make twice as much!
