Recipe- Healthy Dinner Salad

This recipe is perfect for meatless Monday, or any day of the week you want a refreshing and filling meal. All ingredients in this salad are fresh, and there are no artificial ingredients- not even in the dressing! Great if you’re on a diet, or just looking for a healthy alternative for dinner.


  • Spinach
  • Arugula (optional)
  • Tomato
  • Red onion
  • Steamed asparagus
  • Orange/red peppers
  • 1/2 avocado
  • Slivered almonds (optional)
  • Salt, pepper, and dash of garlic- to taste
  • Dressing: olive oil and balsamic vinegar

This salad tastes amazing, and it will fill you up without weighing you down. I like to serve it with a side of garlic bread, but it’s not necessary. My favorite salad recipe!
